Keeping the wheels turning

With seeding looming I thought it might be timely to share one of my go-to recipes. 

I’m all about one bowl wonders when it comes to baking as I hate washing up and we don’t have a dishwasher (first world problem I know). 

The trusty old weetbix – a pantry staple in many a household – is the hero of today’s dish… WEETBIX BISCUITS. 

They may have a fancier name out there but at the end of the day – they are what they are ! 

Here’s the recipe:

4 weetbix (crushed)

2/3 cup rolled oats

3/4 plain flour

100 g brown sugar

1/3 cup choc chips (dark is my preference)

2/3 cup dried apricots (diced) (can substitute dried cranberries, sultanas etc)

3 tbsp margarine

2 tbsp golden syrup

1 tsp bicarb soda 

1/4 cup boiling water

Mix dry ingredients together. Mix wet ingredients together. Combine. Bake at 160 degrees (preheated oven) for 20 minutes.
